To Pickle Cabbage
Take a very hard Cabbage & Pull of alle the outward Leaves then take the [illegible] part which is not Stalky salt it & let it lay for 3 Days. then boil it till it is tender & set it by the Fire [illegible] till it be very dry. Scald salt & dry a Quantity of Garlic in proportin to your Cabbage in the same manner. When both are prepared put your Cabbage into a Jarr laying between each Row of leaves a little Garlic two Pods of [illegible] & long pepper a little sliced Ginger. Then pour over it a pickle of White wine Vinigar with a Spoonfull of Mustart Seed & one of [illegible] Mustard & a little Turmeric stirred into it The sauce will pickle[s] [onions] [illegible]
