To Pickle Cabbage
Take a very hard cabbage & pull of all the outward Leaves then take the [illegible] part which is not stalky [illegible] it & let it lay for 3 Days then boil it till it is [illegible] & set it by the Fire till it be very dry. Scald yn [illegible] dry a [q]uantity of Garlic (in proport[ion] to your Cabbage in the same manner. When both are prepared put your Cabbage into a Jarr laying between each Rowl of leaves a little Garlic two Pod of [illegible] & long poppng a little sliced Ginger. then [pour] over it a pickle of [illegible] Vinigar with a Spounfulls of [Murtart] Seel & one of [make] mustard & a little Turmer[ic] stirred into it the same [will] pickles [2 words illegible] -
