To Make My owne Chees Cakes

[inserted left margin: 30i] For ye Curd, take a Galen wanting a pinte [inserted above: of milk] which must be swete Creame put in your runet[rennet]. when it is Come streane [strain] ye whey from it yn put in a -- bole, put to it a qr[quarter] of a pounde of fresh buter yn put [inserted above: it] threw a hare Seve which done put to it 4 eggs 3 or 4 spoonefuls of creame some mace & -- Cloves & nutmeg 3 qrters of a pound of Corons 4 or 5 spoonefuls of sack, yn for ye crust take a Pound of fine flowre 3 qrters of a pound of buter rub it very well in to your Floure yn put in [text loss] Eggs Take out one white as much Faire water [text loss] will make it up in to a thick paist which role [text loss] a Moderate thicknes, buter your Tin[crossed out:s]s & put [text loss] your paist yn fill ym puting on ye tops of the[text loss] half a Dosen thin peces of Buter to ceep ym from browning, Back ym as Paile to be Enough as you can [text loss].
