A recipe for making a small clear confection by scalding lemon juice with sugar, mixed with minced lemon peel.
Transcript
Beat & sears your suger & put it in to a silver poringer & as much juce of Lemons as will wett the suger sett it on the fier and lett it scold till it look clear but dont leet it boyle mince some of the peal into it - so drop them on paper sett them on a stone till they dry.
