To Make Goosberry Vinegar
To every Gallon of Water take [6] of ripe Gooslings bruise ym well in a Mortar & poure on your water being first boyled and then cold again, put them into a Tab of [Vefeill] where they may have[t] [roem] to worke, lett them stand in a hot place till ye fruit be risen & that it have [d]one [illegible]ing, yn put thro[inserted above: u]gh a strainer or [Tem's], adding to every gallon of juice halfe a pound of ordinary powder sugar, and [illegible] it up in a Barril fit for it, when it hath done workeing stop it up and let it stand warm nine months without any motion or joggling and it will be very good but then you must [illegible]ther draw it into bottles or else wash your barril and put it into it again
