Take a pd of Beef, cut into thin Slices, beat it well [illegible] the back of a Knife hit [tender], [ridge] one it a handful of flower, put it into the Sauce [Jam] to [illegible] with some Butter that you must have ready, [hot], have yr [illegible]- pan ready [with] a pint of Gravy, a Gill of red wine two Anchovies, Mushrooms, [Mouls], Peper, Salt, a little Lemon-juice, then set it over the fire for two or three Seconds [Mr illegible] [Mrs Hall illegible]
