- Take a pd of Beef, cut into thin Slices, beat it well wth the back of a Knife til tender, [illegible] over it a handful of Flower, put it into the Sauce-pan to gether with some Butter that you must have ready, [hot], have yr Sauce-pan ready wth a pint of Gravy, a Gill of red wine two Anchovies, Mushrooms, Morels, Peper, Salt, a little Lemon-juice, then set it over the fire for two or three Seconds Mrs. Simpson Mrs. Hall [illegible]
